What phone you have? CM is fine on some phones, but for example on SGS 3 with exynos chipset it doesn't work so well due to Samsung not releasing the source. But if you have stock kitkat I would either root it only or look if there's stock rom deodex.
If there's stock deodex then you can install the Xposed framework and from there you can install the addons to make the changes you want.
In case you still go with CM, there's tons of themes on the play store for CM since it comes with the T-mobile theme changer.
But it all depends on the phone you have.

For me my contract will end in 10 days and was thinking on getting the SGS 5, but instead I'll probably go with the Note 3 anyway for is large screen and 3Gb Ram <3

If it's a moto G I would keep stock just rooted. Root gives you superuser, allowing you to access to the system that usually is locked to normal users.
With root you can run apps like titanium backup, that allows you to backup, remove, etc, system apps. Rom manager that allows you to install custom recoverys and ROMs straight from homescreen, etc.
Or even install xposed framework to apply addons, community improvements, etc, without messing with the system files

This is the biggest advantage it would bring me. However, rooting it afaik voids warranty (which I'm quite fond of)... I'll have to think about it, removing system apps I don't need/use is nice but not much of a trade-off for the warranty. Thanks for the info.

If you're not comfortable with it you can freeze apps you don't use on the settings/apps/app options.
Still rooting is easier then flashing roms since for that you need to unlock the bootloader, flash a custom recovery, etc.
Always rooted my phones, but I think the note 3 will be the first I'll keep stock due to the S-pen need of stock firmware to work properly and the whooping 3Gb RAM should be more then enough to piss on multitasking.

Just root it, install Titanium Backup and remove all the crap you don't want. Also install greenify and freeze those apps that you don't want them to autostart.
